Some kitchen science with a tasty treat at the end!
What you need:
- water
- sugar
- honey
- bicarb soda
What to do:
- Put 2 tablespoons of water, 2 tablespoons of honey and 3/4 cup sugar in a saucepan.
- Put it on a high heat, but do not stir it. Let it boil.
- Once it starts to turn golden-brown, remove from heat.
- Add 1.5 teaspoons of baking soda and whisk. Stop whisking when it starts to rise.
- Pour the mixture into a tray lined with baking paper or foil. Do not stir it or tap the tray, as this will remove the bubbles.
- Allow to set. Once set, break into pieces and enjoy.
What happens:
The bicarb soda causes carbon dioxide to be produced. This is a gas, so it forms bubbles in the mixture, giving the texture.
